CAPPUCCINO NOUVEAU GENRE

Technique: EMULSIFICATION
Food additives: SOY LECITHIN 

INGREDIENTS

  • coffee cubes (freshly brewed coffee, hot sweetened condensed milk) to taste
  • ice cubes, to taste  
  • 1 cup (250 ml) soy milk 
  • 2 tsp (10 ml) chili powder
  • 6 tonka beans, grated 
  • 1 sachet (2 g) SOY LECITHIN 

DIRECTIONS 

COFFEE

In a pitcher and using a spoon, dissolve condensed milk in hot coffee. Refrigerate until cold, or place in the freezer for about an hour to save time.

CHILI & TONKA FOAM 

In a rectangular, flat-bottomed bowl, combine soymilk, chilli powder and grated beans with a spoon. Then, using a hand blender, dissolve soy lecithin into the solution. Mix for 3 to 4 minutes, then let sit for 5 minutes

ASSEMBLY 

Pour cold coffee in clear glasses and top with chilli-tonka foam.
