JAPANESE SUNSET AIRS

Technique: EMULSIFICATION
Food additives: SOY LECITHIN

INGREDIENTS 

  • 1 1/4 cup (315 ml) blood orange juice
  • 2 fl oz (60 ml) sake
  • 1 fl oz (30 ml) lychee syrup
  • 1 sachet (2 g) SOY LECITHIN

DIRECTIONS 

FOAM

Pour the juice into a rectangular, flat-bottomed bowl and sprinkle in soy lecithin. Using a hand blender, blend for 3 to 4 minutes, then let sit for 5 minutes. For different colour foams, repeat with any fruit juice.
In a cocktail shaker, shake together sake and syrup. Pour into a glass and top with blood orange foam.
